    Herbed Ricotta Toast

    This simple Herbed Ricotta Toast recipe will take you just a few minutes to throw together for a luxurious high-protein breakfast, brunch, or toast-for-dinner. I've got a list of great topping ideas including sliced peaches, roasted tomatoes, or just a drizzle of olive oil.

    So apparently Ricotta Toast is the latest TikTok food trend, which is kind of hilarious since I first published this recipe in 2014 which I guess means I was ahead of my time?

    I'm certainly not trendy, and I'm not even on TikTok, but if cool, creamy, herb-flecked ricotta slathered onto crisp sourdough toast is on fleek right now, that's something I can get on board with. Ricotta is packed with protein, and coupled with the carbohydrates from the toast, it makes for a simple and satisfying meal. 

    Add your choice of toppings bringing healthy fats and an array of micronutrients, and the gang's all here. Let's get into it!

    What's in this recipe?

    To make ricotta toast you really only need two ingredients - ricotta and toast. We've fancied it up with herbs and toppings, but those are really up to you. Here's what you'll need:

    • Bread --> I used a rustic sourdough bread, but really anything is fine.
    • Ricotta --> Go for full-fat for a super satisfying meal.
    • Herbs --> I used dill and fresh basil.
    • Salt and pepper --> As one does.

    How to make ricotta toast

    Making ricotta toast involves three steps. 

    • Step 1: Make the herbed ricotta.
    • Step 2: Toast your bread.
    • Step 3: Spread your toast with ricotta.
    • Step 4: Add toppings as desired.

    You can do this! I believe in you!

    And I'll let you in on a secret: you don't have to herb up the ricotta if you don't want to. Sure, it's nice, but there are those moments where we're hardly capable of more than smearing some plain old ricotta on a cracker and calling that dinner. Judge not, it happens.

    What toppings are best?

    The world is your topping oyster, my friend! You can go sweet, savory, or just stick with bare naked ricotta toast. Here are some ideas for toppings:

    • Thinly sliced cucumber and fresh dill
    • Semi-dried Tomatoes 
    • Sliced peaches drizzled with balsamic reduction
    • Balsamic Baked Strawberries
    • Olive oil and sea salt
    • Honey and sea salt
    • Sliced avocado
    • Tempeh Bacon 
    • Roasted Hokkaido Pumpkin slices
    • Olive Oil Braised Chickpeas

    You can, of course, go one step further and set out a selection of toppings. This would be the perfect thing to do family style: set out a bowl of ricotta and a platter of toppings so everyone can choose their own adventure.

    What's the deal with ricotta?

    Ricotta is an Italian curd cheese. Traditionally made from whey, a protein-rich by-product of making cheeses, ricotta means 'cooked again'.

    Ricotta has a rich but delicate flavour and a grainy texture. The fat content can vary quite a bit, but I do recommend using full-fat ricotta in this recipe. Ricotta cheese is rich in protein, calcium, vitamin A and B12.

    Herbed Ricotta Toast

    Ingredients

    • 4 slices sourdough bread toasted
    • 8 oz full-fat ricotta
    • ¼ cup fresh herbs I used basil and dill
    • salt and pepper to taste
    US Customary - Metric
    Prevent your screen from going dark

    Instructions

    • Wash and roughly chop the herbs.
    • Stir the herbs into the ricotta and season with salt and pepper.
    • Toast bread.
    • Spread each slice of toast with a thick layer of herbed ricotta.
    • Add toppings as desired.

      Isn't it bliss to have nothing to do? At least for a short while. I bet your brain and body can't keep still for long. Toast for tea is a perfect thing for when you want to do almost nothing but till nourish. And when you are rushed off your feet and only have time to post some bread in a toaster and top with something scrummy my mixed into ricotta. Can I have kimchi on mine? And thanks for the link to my labneh and fig tartines. But they aren't fancy. they only have a fancy name ;-))

        My brain and body are EXHAUSTED! The husband actually popped over to Croatia for a minibreak this week and I refused to go with him because I just want to SLEEP! I'm hoping by the time we fly to Canada next week I'll be feeling a bit refreshed. But yes, toast for dinner is pretty much perfect for these times, and by all means, kimchi it up!

      Brilliant! Toast for dinner is my favorite thing to make when I'm having "me time" and want to keep things simple. Goat cheese would be fantastic with these herbs and toppings as well. Yum!
