    These Roasted Cabbage Steaks are a simple side dish that’s surprisingly flavorful, with savory garlic powder, smoked paprika, and a drizzle of melted butter. Roasting in the oven makes the edges fantastically crispy and browned while the centers are tender and caramelized. You’ve never had cabbage like this before!

    While Brussels sprouts and cauliflower seem to have gotten a new PR team these past few years, cabbage has largely stayed out of the spotlight. I'm here to change that with this roasted cabbage steak recipe! In fact, with all of our delicious and healthy cabbage recipes!

    Cabbage steaks aren’t just humble, though—as a nutritionist, I love that they’re loaded with nutrients. But let’s be real: you’re not going to eat cabbage unless it also tastes good. Luckily, these roasted cabbage steaks have flavor in spades.

    As with other vegetables, roasting adds significant flavor by caramelizing, browning, and crisping the cabbage's edges. Butter makes the cabbage steaks even more delicious, and it browns as they roast, deepening the flavor even more. Smoked paprika adds an earthy, smoky flavor, and garlic powder adds a savory note. 

    Since cabbage steaks are clearly not steak-steaks, I love serving these with a puddle of garlicky white bean purée to pump up the protein. Because nobody needs a hangry vegetarian at the table.

    Let's Make Cabbage Steaks Together!

    Step 1: slice your cabbage

    Use a sharp knife to slice the cabbage into 1-inch-thick slabs. If parts fall away, that’s fine! Just piece them back together as best as you can; those bits will get extra-crispy and delicious.

    Arrange the cabbage slices on a baking sheet drizzled with olive oil. Sprinkle the steaks with salt.

    Step 2: make the spiced butter

    In a small bowl, stir together the melted butter, garlic powder, smoked paprika, salt, and pepper.

    Step 3: brush baby, brush

    Spoon the butter onto the cabbage steaks and spread it to coat the cabbage evenly. (A pastry brush makes this easier.) Make sure you work the butter into all of the nooks and crannies of the cabbage!

    Step 4: time to roast those cabbage steaks

    Roast the cabbage in a preheated oven at 200°C / 400°F until the edges are crisp and the middles are tender when pierced with a knife or fork - this takes about 20-30 minutes depending on how thick your cabbage slices are.

    Step 5: serve

    Ohhh yeah. Just look at those buttery, crispy edges. Come to mamma!

    Ingredients

    • 1 medium cabbage
    • ¼ cup butter softened / slightly melted
    • ¼ teaspoon garlic powder
    • ¼ teaspoon smoked paprika
    • ½ teaspoon salt
    • ¼ teaspoon freshly ground pepper

    • Slice the cabbage into 1-inch thick slabs

    Notes

    • Nutrition values are an estimate only
    • Choose a cabbage that is heavy for the size - mine was 1.2kg / 2lbs 8oz
    • The butter will brown as the cabbage steaks roast, and they will both smell and taste fabulous.
    • The outer leaves will become very brown and crisp. They are delicious, and you should sneak them off the tray before anyone else gets to them.
    • I love serving these with some toasted nuts or seeds and herbs on top

      Delicious and easy way to make cabbage extra yummy. I didn't have plain garlic powder or smoked paprika but I used spice mixes that includes both and the result for a thumbs up from my husband.
