Vegetarian Caesar Dressing with Roasted Garlic

Ingredients

  • 1 bulb roasted garlic
  • 1 large lemon juiced
  • 1 tablespoon capers
  • 1 tablespoon caper brine
  • 2 teaspoon smooth Dijon mustard
  • 1 clove garlic smashed
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • cup grated Parmesan cheese
  • ¼ cup extra virgin olive oil
  • ½ cup full-fat Greek yogurt

Instructions

  • Combine all of the ingredients in a blender. 
    1 bulb roasted garlic, 1 large lemon, 1 Tbsp capers, 1 Tbsp caper brine, 2 tsp smooth Dijon mustard, 1 clove garlic, ¼ tsp salt, ¼ tsp black pepper, ⅓ cup grated Parmesan cheese, ¼ cup extra virgin olive oil, ½ cup full-fat Greek yogurt
  • Blend until smooth.
