- 4 cups shredded napa cabbage
- 1 large carrot shredded
- 2 stalks celery diced
- 1 cup parsley leaves minced
- 1 cup chickpeas
- 2 lemon wedges
- salt and pepper to taste
Divide the napa cabbage, shredded carrot, celery, parsley, and chickpeas between two bowls or lunch containers.
Serve with a generous squeeze of lemon, and a touch of salt and pepper.
