Carrot Apple Smoothie with Ginger

A zippy Carrot Apple Smoothie with a touch of ginger and lemon for extra zing. This easy vegan recipe takes just a few minutes to whip up in your blender and will load you up with antioxidants and healthy plant-based fiber.

Ingredients

  • 2 medium carrots scrubbed and peeled if desired, cut into chunks
  • 1 large apple cored and sliced into quarters
  • 1 tablespoon fresh ginger A chunk about the size of your thumb
  • ½ - 1 lemon juiced
  • 2 tablespoon hemp seeds
  • ½ teaspoon ground cinnamon
  • 1 cup ice cubes
  • 1 - 1 ½ cups cold water

Instructions

  • Place all ingredients into the jar of a blender with one cup water.
    2 medium carrots, 1 large apple, 1 tablespoon fresh ginger , ½ - 1 lemon, 2 tablespoon hemp seeds, ½ teaspoon ground cinnamon, 1 cup ice cubes, 1 - 1 ½ cups cold water
  • Blend on high speed until smooth.
  • Add more water to thin smoothie if desired.
  • Serve immediately.
