If you're looking for an easy and delicious way to get the most of out strawberry season, these Balsamic Baked Strawberries are the BEST! Baked in the oven with just a bit of maple syrup, roasted strawberries are amazing on top of ice cream, yogurt, made into jam, or spooned as a sauce on top of cake. They're vegan, healthy, and simply incredible!
Wash and hull your strawberries. Slice any large strawberries in half so you've got a uniform size. Place them in a single layer into a 9x9 baking dish (or larger is fine too).
1 lb medium strawberries
Whisk together maple syrup, olive oil, and salt, and drizzle the mixture over the strawberries gently tossing until each strawberry is coated.

Bake your strawberries for about 30 minutes. I like to give them a gentle stir at the 20 minute mark to ensure they're not getting too brown on top. Watch them carefully towards the end and remove the strawberries from the oven before the juices begin to burn.
Remove the berries from the oven. Stir in balsamic vinegar, and set aside to cool slightly before serving.
