pumpkin pie overnight oats

These quick and easy overnight oats are pumpkin spice and everything nice! Vegan, easily gluten free, and ready when you wake up - what's not to love?

  1. Combine all of the ingredients in a glass jar with a lid.
  2. Shake or stir to combine well.
  3. Refrigerate overnight, or for at least 4 hours.
  4. Serve with a drizzle of maple syrup and a handful of toasted pumpkin seeds (both optional)

Recipe Notes

They say that overnight oats are best eaten within 12 hours, but I routinely make two at a time and eat the second serving a day or so later. I wouldn't advise making any more than that, however.
