This was one of those weeks where I had at least one kid at home with a snotty nose (but full energy!) all week, so by Friday I was feeling especially cooked. On Fridays I always make the kids cinnamon toast for breakfast, and although I generally have a no TV before school rule, since both kids got up super early and I was extra tired and cranky, I relented and gave them access on this morning.
They each had one piece of cinnamon toast, and then both requested seconds, so I threw a couple of slices of bread into the toaster and left the room to make the beds. While I was in the bedroom I heard Niko yelling MOOMMMM at the top of his lungs, but since I hate being yelled for like that and it's usually about something ridiculous, I ignored him.
I went back into the kitchen about one minute later to find Niko standing by the toaster with a metal fork in each hand, poised with his hands inn the air about to jam the forks into the toaster to lift the toast out.
For. The. Love. Of. God. I nearly crapped my pants in that moment, and then I basically smacked the forks out of his hands.
Needless to say, we had a really interesting conversation about electricity while I was making their toast.
I was telling some colleagues this story during a Friday afternoon Zoom meeting, and one of them (who does not have kids) said, "but don't they need to make mistakes and learn from them?"
I mean, yes, yes they do. But not mistakes that might kill them!
ON HEY NUTRITION LADY THIS WEEK
This week I shared a shiny new recipe for Instant Pot Broccoli Cheddar Soup. It's soooo easy and soooo tasty. As per usual there are stovetop instructions included for those of you who don't have an Instant Pot.
And next since pumpkin season is finally here, I gave this Healthy Pumpkin Granola recipe some much needed love.

COMMENT OF THE WEEK
Olivia left the following comment and 5-star review on my Chocolate Energy Bites recipe:
I made this recipe with the left over almond meal after making almond milk with 1 cup of almonds. It worked perfectly and was delicious!
Thank you!
Leftover almond meal is a great idea!
THIS WEEK’S MENU
Now that I've typed out this menu, it's looking pretty carb- centric. Oh well, we all know I love my carbs.
HERE’S WHAT’S ON THE MENU THIS WEEK:
Monday: Big salad for me! I've got some kale that needs using up, so will probably do a Kale Caesar.
Tuesday: Testing a new pasta recipe for the blog.
Wednesday: Niko has soccer, so we'll be grabbing hotdogs from the kiosk in the park.
Thursday: Taking an old friend / new colleague out for dinner.
Friday: Girl's night at a friend's cottage. I think we're doing pasta.
Saturday: Family dinner - Not sure what's on the menu yet, but thinking of busting out my pasta rollers perhaps.
Sunday: Pizza night! I've got a couple of balls of my Spelt Pizza Dough in the freezer.
