I sat for a long time writing this meal plan, not really knowing what to put on it. By this I mean only what's for lunch on Tuesday and Thursday, because the rest of the week is so much built around routine and Friday is another attempt at lunch out (this week's lunch out was cancelled at the last minute). Maybe it's because nothing is really in season right now, so my inspiration is waning. Or maybe it's time to shake up my lunches, so let me throw the question out to you nice people; what's in YOUR lunch boxes this week?
Friday is a single lady dinner. Paul is off to Barcelona for the weekend for a half marathon, and I'm not going with him this time so I've got a whole weekend home alone. I'm going to challenge myself to actually cook meals for myself the entire weekend rather than reaching for the takeout menus like I usually do. We'll see how that goes!
I'm not going with him this time because I'm saving my pennies (or kroners, as it were) for a girl's trip to NYC next month! And since you know I love to plan things, I'd love your recommendations for NYC. It's the first time there for both of us, so I want to know what you think. Where to go, what to see, what to eat. Mostly what to eat; so far my NYC wish list looks more like a menu than anything else.
1. The Evolution of Diet. This is a long but super interesting interactive read from National Geographic. Well worth the time.
2. Are we clean eating our way to new eating disorders?
3. Are vitamin drinks a bad idea? YES!
4. This is awesome: Doc McStuffins more evidence based than Dr. Oz.
5. Another reminder just how important it is to move our bodies! Lack of exercise linked to twice as many deaths as obesity.

I am definitely finding myself less than inspired lately also! This week I have a lot of Thai food on the menu...guess I'm craving those warm curry flavors!
