Hi folks! I hope you’re all having restful and happy weekends. Paul and I are babymooning in Crete this week, taking advantage of some warmer weather before our travel cut off. So far it’s been a lot of amazing food, great sights, and lots of relaxation. Follow along on instagram if you like!

I’m on holiday for most of this week, so no meal prep coming from my kitchen. But perhaps some healthy inspiration for your Thanksgiving table? This Kale and Butternut Squash Salad with Chickpeas and Wheatberries is just the thing.

Also catching my eye this week is this Vegan Lentil Loaf with Roasted Carrots and Portobellosย (except without the mushrooms, because, yuck) from Veganosity, this Shaved Brussels Sprouts and Kale Salad with Lemon Maple Dressing and Hemp and Pumpkin Seed “Parmesan” from The Full Helping, and this Wild Rice Stuffing with Butternut Squash, Pears, and Pecans from The Roasted Root. Yum!

    I love the idea of a babymoon. Enjoy! Great links, I’ll have to forward these to Alex since she’s in grad school for health psychology. And thanks for sharing my lentil loaf. You won’t even notice the mushrooms, but you can leave them out if you can’t stomach them. ๐Ÿ˜‰

      Yes!!! So glad to hear there’s another mushroom hating vegetarian out there! They’re the bane of my existence as everyone wants to feed me mushroom things, but I just don’t like ’em at all! There’s a bump pic at the end of my latest pregnancy post, which went up about a week ago ๐Ÿ™‚
