Howdy folks! I hope the weekend is treating you well so far. We’ve spent much of the day today getting our apartment ready to be photographed so we can put it up for sale the second we’ve found something new. Wow, what a lot of junk we’ve gotten out of here! And our balcony, for probably the first and last time in the 5+ years we’ve lived here, looks like an actual balcony. No bikes, no stinky sports gear, no random bits of flotsam. Thankfully it was a gloriously sunny day today, so we got to soak it up, even if briefly.

I got a LOT of meal prep done this weekend, including a riff on this Kale and White Bean Tortilla. This time I used some rainbow chard instead of kale, and dollops of fresh ricotta instead of the beans. Same same, but different. I also made a big batch of a tempeh bolognese, and a carrot ginger and red lentil soup. Those recipes will be headed your way sooooon!
