A Friday evening stroll through central Stockholm right around sunset. We’ve been looking after our favourite four-legged friend over the weekend, and I’ve been reminded of how much I enjoy taking long walks and listening to podcasts. Speaking of which, have you discovered the Undisclosed podcast? If you were a fan of Serial, you really should give this a listen. The first couple of episodes are pretty shaky production wise, but if you stick it out things really turn around by episode 3 – which will blow your mind! Definitely worth a listen!

I’ve been feeling really lethargic in the last week and am wondering whether my iron may be low. I’ll be getting it checked soon enough, but in the mean time I’m trying to focus a bit more on iron in my diet, as well as protein. That in mind, I’m planning to whip up a big batch of this Tomato Spinach Lentil Soup to have on hand for quick and easy meals. It freezes like a charm, so I’ll make enough for a few meals this week and freeze the rest.
Also on my radar this week is this One-Pot Tomato Lentil Pasta from Emma’s Little Kitchen, Hearty Marinara Sauce with Lentils and Beans from Kitchen Treaty, and Kellie’s Broccoli, Spinach, and Wild Rice Phyllo Pie from Food to Glow. All delicious looking iron-rich vegetarian meals there that can be made in bulk. My kind of meals!
