KALE CAESAR SALAD

This Kale Caesar Salad is made with massaged kale, healthy vegetarian caesar dressing. It's an easy vegetarian Caesar salad recipe, and can be made vegan with a couple of simple swaps.

I love a kale caesar and i'm not mad keen on the eggy dressings most recipes call for so this looks perfect!  And crispy chickpeas instead of croutons? Genius! -Kate

For the Salad: – Tuscan kale  – Vegetarian Caesar Dressing  – Parmesan cheese  – Crispy Roasted Chickpeas  – Croutons – Salt and pepper

INGREDIENTS:

For the Dressing: – Roasted garlic – Lemon juice – Capers – Dijon mustard – Garlic clove – Salt – Black pepper – Parmesan cheese – Extra virgin olive oil – Full-fat Greek yogurt

INGREDIENTS:

Combine the dressing ingredients in your blender and blend until smooth.

Remove the kale leaves from the stems, and place in a stack on your cutting board. – Using a sharp knife, slice into thin ribbons.

 Using clean hands, massage the dressing into the kale. Add extra dressing as needed.

Toss the salad, and add grated Parmesan. To serve, garnish with grated Parmesan, crispy chickpeas, and croutons.
