– Olive oil  – Yellow onion  – Garlic  – Smoked paprika – Dried oregano  – Ground chilli powder – Pinto beans  – Vegetable broth – Salt  – Lemon juice 

INGREDIENTS:

Sauté the onion in olive oil, stirring frequently, until the onion is softened and just starting to turn brown.

Add the garlic, smoked paprika, oregano, and chilli powder, and stir to combine.

Add the pinto beans, and sauté together with the aromatics for about 2 minutes. Add the vegetable broth and stir well.

Remove from the heat and use a potato masher to mash the beans, or transfer to a blender if you prefer smoother beans.

Stir in the lemon juice, taste, and season with salt as needed.
