RED LENTIL STEW

Easy Red Lentil Stew is the perfect weeknight dinner when you want something healthy, quick, and delicious.  This vegetarian stew recipe is loaded with veggies, and comes together in under 30 minutes.

– Extra virgin olive oil – Yellow onion  – Garlic  – Zucchini  – Carrots  – Red lentils  – Vegetable broth – Crushed tomatoes  – Dried thyme

INGREDIENTS:

Add the oil to a heavy bottomed pot and heat until shimmering. Add the diced onion and sauté until translucent, 2-3 minutes.

Add the garlic, shredded zucchini and carrots and sauté about 5 minutes, until the vegetables are soft.

Add the vegetable broth, red lentils, tomatoes, and thyme.

If you are cooking on the stovetop, reduce the heat to medium-low an simmer until the lentils are soft - about 20 minutes.

Serve hot over rice or pasta.
