REFRIED BLACK BEANS

– Olive oil  – White onion  – Garlic  – Ground cumin  – Chilli powder – Chipotle pepper – Black beans  – Bean broth – Salt  – Lemon juice 

INGREDIENTS:

Sauté the onion in olive oil, stirring frequently, until the onion is softened and just starting to turn brown.

Add the chili powder, ground cumin, minced chipotle pepper, and salt. Sauté for 1-2 minutes to combine the flavours.

Add the beans, along with enough of their liquid to come about halfway up the beans. Simmer, stirring frequently, for about 5 minutes.

Remove from the heat and use a potato masher to mash the beans, or transfer to a blender if you prefer smoother beans.

Stir in the lemon juice, taste, and season with salt as needed.
