For the past month or so the food blog-o-sphere has been a winter squash extravaganza. And with good reason! Winter squash is in season, super nutritious, totally delicious, and is such a versatile ingredient. You can have it sweet or savory, warm or cold, straight up or blended into soups, to name just a few. Today I'm rounding up some of my favourite winter squash recipes from The Muffin Myth and from around the web.
SOUPS AND STEWS:
The velvety texture of winter squash lends its self perfectly to soups, but it does equally well in chunky winter stews. This Curried Red Lentil and Butternut Squash Soup with Kale and Toasted Chickpeas from Choosing Raw looks hearty and delicious!
This Roasted Butternut Squash Soup with Coconut, Miso, and Lime is one of the most popular recipes I've ever posted!
But how about this Thai Spiced Pumpkin Soup from The Roasted Root?
PASTA-ISH:
This Pumpkin and Kale Pasta Bake from MJ and Hungry Man looks like the perfect thing for a chilly autumn meal.
What's better than mac 'n' cheese? Pumpkin Mac 'n' Cheese! This recipe is an oldie but a goodie.
For a satisying pasta dish without pasta, try this Chili Cheese Stuffed Spaghetti Squash from Kitchen Treaty.
Or, for something different try this warm Farro with Butternut Squash and Rainbow Chard from Veganosity.
But if you're looking for something more indulgent, try Rigatoni with Spicy Pumpkin Cream Sauce from Eats Well With Others

One of my favourites for a nutrition reset is this Kale and Butternut Squash Salad with Chickpeas and Wheatberries.

Pumpkin Hummus! Yessss! It's delicious, get into it!
And don't forget Pumpkin and Black Bean Taquitos. They make such great party food, and you can make a big batch and freeze them for later.

I can't seem to get enough squash. I'm so glad it's got so many great antioxidants and is relatively low in calories because I consume copious amounts of it daily!!
