I’ll always remember 2014 as the year that avocado toast took over the internet. Well, for other things too, but yeahhh avo toast! It makes a great snack too – here I’ve smashed half an avocado on some whole grain corn cakes, then sprinkled some hemp seeds over top, and a touch of flaky sea salt. The corn cakes are thinner than regular rice cakes by a little more than half. They’re a Swedish brand, but I’m sure there is something similar out there in the rest of the world, and if not, regular brown rice cakes or other whole grain crackers would do nicely as well. The corn cakes provide whole grains, and a nice crunch. The avocado brings healthy fats to the table, and a nice richness that tends to be satisfying. A bit of protein from the hemp seeds rounds out this nutritious snack. Enjoy!
