snack attack! plain popcorn makes for a great weekday snack //

Popcorn is a healthy snack? It sure can be! Popcorn is a whole grain and it’s got a good amount of crunch and chew power to it, so it can make a perfect afternoon snack if you make it right. Preferably it’s air popped or popped on the stovetop in a small amount of heart healthy oil. In its purest form, air-popped popcorn is a healthy whole grain snack which per 1 cup has about 31 calories, 1 gram of protein, 6 grams of carbohydrate, 1 gram of fiber, and only trace amounts of fat.

For a weekday snack I keep my p-corn as naked as possible – maybe just a sprinkle of sea salt or nutritional yeast. If I’m having it on a Saturday afternoon it’s a totally different story (buttah, baby!) but as a weekday snack I like to keep things healthy. What’s a snack-sized portion of popcorn? 1-2 cups should do the trick.

      Yum! Olive oil and rosemary sounds awesome, I’ll have to try that some time! We don’t have an air popper so it’s stove top popped in these parts, but we’ve got the technique down and absolutely love it!

    My husband and I are on a ridiculous popcorn kick right now, buttah baby is right… and sea salt… maybe a sprinkle of parm?!
