Hi folks! I've got something a little different for you today! I get a lot of questions about how I pack my lunches for the entire week, what kind of things pack well, and how long it takes. So, I decided to show you! I hope you enjoy the first ever Muffin Myth video - and here's hoping there will be more to come!
The recipes featured in this video are these zucchini noodles with tofu, and these chipotle hummus wraps, but made with roasted butternut squash instead of grated carrot. I find the squash freezes quite well, so I can make a big batch and reserve some for a busier week.

Great video, Katie. I try and bring lunch to work 4 times a week, which can sometimes make my mornings pretty hectic. Love the idea of doing the bulk of the work/prep on Sunday - that should make my mornings a bit smoother. Also, I see I should probably spend a little more time in the meal planning department. This was great Katie! Those wraps look incredible. You're so lucky to have someone to make your videos. Alex's boyfriend is a talented filmmaker, but he's so busy that I'd never ask him to film for me. When I finally get up the courage to do a video, it will be me setting up the camera and running around it after I press play-haha!
