how I pack {video}

how I pack a week's worth of lunches on a Sunday afternoon {video} // www.heynutritionlady.com

Hi folks! I’ve got something a little different for you today! I get a lot of questions about how I pack my lunches for the entire week, what kind of things pack well, and how long it takes. So, I decided to show you! I hope you enjoy the first ever Muffin Myth video – and here’s hoping there will be more to come!

The recipes featured in this video are these zucchini noodles with tofu, and these chipotle hummus wraps, but made with roasted butternut squash instead of grated carrot. I find the squash freezes quite well, so I can make a big batch and reserve some for a busier week.

Huge thanks go out to my good friend and talented filmmaker Greg Brown, who put this together for me, and Bensound for the music.

    This was great Katie! Those wraps look incredible. You’re so lucky to have someone to make your videos. Alex’s boyfriend is a talented filmmaker, but he’s so busy that I’d never ask him to film for me. When I finally get up the courage to do a video, it will be me setting up the camera and running around it after I press play-haha!

      Thanks Linda! Though I don’t know how frequently we’ll be able to make these… we filmed that back in November and it wasn’t ready until now! Maybe one per season?

    Great video, Katie. I try and bring lunch to work 4 times a week, which can sometimes make my mornings pretty hectic. Love the idea of doing the bulk of the work/prep on Sunday – that should make my mornings a bit smoother. Also, I see I should probably spend a little more time in the meal planning department. Thanks!

      Thanks Geraldine! Whenever I try to pack lunches in the morning before work it ends up being a chaotic morning! I try to remind myself to be kind to my future self by getting them all ready on the weekend. Makes weekdays so much easier!

    I have been a quiet follower for a few months and have enjoyed all of the information and fun food on here. Thank you so much for showing how easy it really can be, once you put your mind to it! You have inspired me to be better about doing this, as I have been getting quite lazy lately!

      Thanks Anita! Such sweet words. You definitely have to put your mind to being organized about this, but it will actually save you time in the long run. I hope you give it a try!

    The kids and I enjoyed watching this incredible video a few times! We loved hearing your voice, learning about your lunch packing strategies, and I must confess that we all took comfort in spotting your bracelet in multiple scenes… Thanks for leaving us feeling inspired to look at food prep in fresh ways and homesick for more magical days at “Camp”.

    I’ve been following your blog for some time. I really enjoy your recipes and the no-nonsense approach you take towards cooking and food prep. I made your chocolate mousse recipe last night and my kids loved it. No need for them to know what was in it. 🙂
